Chicken Tkka Starter or Wrap

Things you need:


Chicken Tikka:

  • 8 Boneless skinless chicken thighs, cut in to 3 or 4 pieces

First Marinade:

  • 2 tbsp each Ginger, Garlic paste

  • 1 tsp Red Chilli paste, or Kashmiri Chilli

  • Squeeze of lemon

  • 1/2 tsp salt.

  • 8 tbsp of Second marinade (add after first marinade has infused for 20 mins)

Tikka Marinade (second):

  • 300g Greek yogurt

  • 1 tbsp Ginger paste

  • 1 tbsp Garlic paste

  • 1 tsp Kashmiri chili powder

  • Juice 1/2 lemon

  • 1/4 tsp red chili powder

  • 3/4 tsp turmeric

  • 1/2 tsp ground cumin

  • 1/2 tsp ground coriander

  • 3 tbsp olive oil

  • 2 tsp garam masala

  • 1 tsp salt

Mooli Red onion Mint salad:

  • 1 small red onion thinly sliced

  • Half mooli peeled

  • 1 tbsp mint finely chopped

  • 1/2 tsp ground cumin

  • 1/2 tsp chaat masala

  • Lime juice quarter.

  • Seasoning to taste

Green herb Chutney :

  • 25g mint leaf

  • 100g fresh cilantro. Stalks included. Chopped.

  • 1/2 tsp finely chopped green chili

  • 1 garlic clove crushed/minced

  • Juice of half lime

  • 1/2 tsp sugar

  • Optional step 4 tbsp Greek yogurt.

  • 1.5 tbsp mayo

  • 1 tsp garam masala

  • Seasoning to taste.


Steps:

  • Mix the first marinade on chicken well and leave to infuse for 20 mins.

  • Add the second marinade and then leave to infuse overnight or for 8 hours.

  • Make green herb chutney by blitzing up everything except mayo in a blender. You can add a little water to get it going but not too much. If you add too much you will have to drain it off later. You can also add the greek yogurt which gives a more creamy sauce. Once a paste is made add this to the mayo and adjust seasoning. Set aside in a squeeze bottle if you wanna chef it up. Green color lasts 2 days.

  • Assemble salad by combining everything in a bowl. Mix in spices, herbs and seasonings and check it's all balanced.

  • Thread chicken onto skewers and cook under a hot grill (broiler) or on bbq 7-10 mins should do it. Baste from time to time. Brush with Ghee when cooked.

  • Plate up either with Tikka, salad and chutney as a starter or make into a naan wrap!!
