Chorizo Chilli Pepper Jam

Makes: 400g

Prep Time: 15 mins

Cook time: 30 mins


Things you need:

  • 200g Finely chopped chorizo

  • 100g diced red pepper

  • 1 medium shallot finely diced

  • 3 garlic cloves crushed

  • 2 tbs thyme finely chopped

  • 1-2 tsp red chili seed

  • 1 tbs smoked paprika

  • 50ml sherry vinegar

  • 2 tbs tomato paste

  • 1 tbs maple syrup

  • 2 tbs olive oil

  • 1/2 tsp Salt


Steps:

  • Saute onions, garlic, pepper, thyme, spices, salt on medium for 5 mins

  • Add vinegar and cook for 3-5 mins until syrupy

  • Add tomato paste and maple and cook for a couple of mins

  • Add chorizo Stir through. Add 1 cup of water and bring to a simmer. Cover and cook for 30 mins on low

  • Adjust seasoning at the end if needed.


Tips:

  • Store for 1-2 months in an airtight container in the fridge, if it lasts that long.
