Things you need:
5g cumin seed
30g coriander seed
5g black peppercorn
10g fennel seed
20 cardamom pods(5g), seeds only
Half stick cinnamon
5g mace
3g cloves
Steps:
Toast spices in a skillet, for a few mins over a medium heat. Don’t burn them, just release their natural flavors.
Put all ingredients into a spice grinder and blitz until you have fine powder.
Pass through a sieve to make sure no spice chunks are present in the final mix.
Store in an airtight container.
Tips:
This keeps for months in your pantry but you want the spice mix to be fresh so make enough to last you a little while.
