Egg Pasta Dough

Things you need:


Pasta

  • 500g Type OO Farina Flour

  • 3 Large eggs

  • 2 Large egg yolks

  • Pinch Salt

Steps

  • Make as per video instrutions. Work in stages. Can be made by hand or a food processor. Hand is better.

  • This pasta is good for stuffed pasta like Ravioli and long pasta like Pappardelle, where you want to serve this with a rich sauce.

Tips

  • Keep the pasta you are not using under a damp cloth while shapping and cutting other pieces.

  • Don't over cook the pasta in salted boiling water. It doesn't take long 1-3 mins sometimes

  • Store the pasta on semolina while shaping out the other pieces. This stops it from sticking.
