Beef Veloutè



Makes: 4-5 portions

Things you need:


Veloutè

  • 25g Unsalted Butter

  • 25g All Purpose unbleached flour

  • 1 Litre Stock of your choice.

  • 1 Tbsp Chopped Tarragon

  • Season to taste

Steps

  • Melt butter and flour together in a saucepan. Cook 2-3 mins on low heat until raw flour taste has gone.

  • Add Stock of your choice. I used beef. Bring up to the boil and turn down to a simmer. Skim off any foam and scum that comes to the top. Simmer for 25-30 mins.

  • Strain into a clean pan. Season to taste and add a squeeze of lemon or add a dash of vinegar of your choice and chopped tarragon.

Tips

  • Use different stocks, herbs, spices, vinegars to mix up the base of this sauce.
